What makes it extraordinary? Taiwan’s subtropical climate accelerates the ‘angel’s share’ evaporation, and intensifies the interaction between spirit and barrels.
Maturation here is a challenge—losing up to 15% annually to evaporation while achieving 15 years of balanced flavor requires masterful skill.
Usually such extended aging was deemed only possible in temperate regions near 50°N latitude (such as Scotland or Japan).
